butter – 40g

Crêpes —¶

This week, I want to share a crêpe recipe. The best I have ever found. ¶

One thing I love about this recipe is that it requires the zest of a citrus fruit. I love citrus fruits! They are like a really needed ray of sunshine during a Berlin winter.
I have tried this recipe using the zest of various fruits, including orange, lemon, grapefruit, sweet pomelo and bergamot. I don’t have a favourite. I will forever love all citrus fruits equally. ¶

I recently developed a habit of buying any citrus fruit that catches my eye and mixing its zest with the 40g of sugar needed for one batch of crêpes. I let the sugar and essential oils mix in a jar until the day I am deciding to make crêpes again. I check on the aromas every now and then. A bitter bergamot will transform into a subtle, sweet flower aroma in a few days only. It is fascinating! ¶

If you haven’t already, zest the citrus fruit of your choice and put aside.
Sift the flour, add the sugar, the zest, the eggs and step by step add the milk while mixing with a whisk. Let the butter slowly melt on lowest heat in a small saucepan. Add the butter to the mixture and let sit for an hour at room temperature.
